About US
THE STORY OF SUSHI & SALAD
Sushi & Salad began in Ely in 2021, during the uncertainty of the COVID pandemic. Built around fresh sushi and Japanese-inspired food, it grew through resilience, creativity and a genuine love of hospitality.
We believe food should appeal to every sense: beautiful before the first bite, fresh and balanced, and memorable afterwards. Our chefs combine traditional Japanese techniques with modern creativity, preparing sushi, sashimi and colourful salads with precision, care and respect for every ingredient.
Led by CEO and Executive Chef Juliana Correa Rodrigues, Sushi & Salad has grown from Ely to Stamford and Saffron Walden, with an exciting new restaurant coming to St Ives. Each location has its own character while sharing the same standards, values and passion.
Our purpose remains unchanged: fresh ingredients, beautiful presentation, thoughtful hospitality and Japanese food made with genuine passion.
Freshness and Flavour
We founded Sushi & Salad with a simple idea: to combine high-quality ingredients with the artistry of Japanese cuisine.
Our vision has always been to make Japanese food approachable and exciting, blending traditional techniques with a modern twist. This philosophy is at the heart of every dish we serve, from the perfectly sliced sashimi to our hand-rolled sushi and signature katsu curries. Our attention to detail ensures every meal reflects our love for bold, fresh flavours.
A Menu to Inspire
Our menu is designed to delight every diner, whether you’re a sushi connoisseur or exploring Japanese cuisine for the first time.
Start your meal with a selection of fresh sashimi, featuring expertly cut salmon, tuna, and sea bass. Indulge in crowd favourites like the Dragon Roll, bursting with unagi and avocado, or our Spicy Tuna Rolls for a little heat. For something hearty, our Chicken Katsu and Teriyaki dishes are served with fragrant rice and house-made sauces. Each dish is crafted to highlight the balance and beauty of Japanese cooking.
